Whip up a quick & delicious meal when you are fresh outta food. All you need are the basics: chicken breast, cheese, black beans, brown rice & California peppers.
1. In the AM, cook beans in crockpot. Takes 8 hrs. This recipe gets two things up

2. Sauté onions and garlic, add to baking dish with chx. Be sure to pound your chx & put chicken broth when you bake it (so it is moist and flavorful). Bake at 400 degrees for 40-50 minutes.
3. Cook brown rice
4. Make salsa. EASY and so worth it. Just boil CA peppers till they are soft to the touch. Leave the seeds in for spicy / remove seeds for mild. Food process chilis and a hit of the boiling juice. Add a pinch of salt for flavor.
5. Remove chx & drain liquid. Combine all ingredients & bake for about 8 minutes when you are ready to eat
